Rosemary Citrus Drink

This is a sparkly, tangy drink, great for autumn or winter. Fresh rosemary gives it a flavourful twist. People always ask for the recipe.

We use San Pellegrino natural sparkling mineral water.

Rosemary Citrus Drink

10 lemons
10 oranges
20 sprigs of fresh Rosemary
2 cups honey
6 litres sparkling mineral water

1. Zest 5 of the lemons.
2. Juice the oranges and lemons. It should make 5 cups. Top up with water if necessary.
3. Combine zest, juice, rosemary, and honey in a saucepan over medium heat. Boil for 1 minute, stirring.
4. Remove from heat. Strain and let cool completely. Now you have a syrup.

To serve, pour 150 ml sparkling water into a glass. Pour in 40g syrup. Don’t stir or the drink starts loosing its fizz!

A nice touch is to put a slice of lemon in each glass when serving it.
