Waffles for Breakfast!

Wholegrain waffles are a great healthy way to start the day. When people ask me about simple gluten-free breakfasts, I often point them to waffles. Once you have a good waffle iron the rest is simple.

The basic recipe is this: freshly ground flour from a grain or your choice, ground seeds/nuts, salt, water.

Chickpea, Tomato and Coconut Soup

I was Googling recipes using chickpeas and ginger, as that’s what I had on hand, and I discovered this creamy, tasty and satisfying soup which is also super easy and quick to make with ingredients that are usually lurking in the pantry! I changed it around a little, and for something really special I recommend drizzling the served plates of soup with a spoon of the coriander dressing, it’s fragrant zing adds a great contrast to the rich creaminess of this soup. I also like the addition of sliced cherry tomatoes, which cut through the gingery tang. Enjoy!

Tofu Zucchini Casserole

Zucchinni and scaloppini! What a great season they’ve had this summer. I think we came up with a new way of serving them every third day over the last couple of months to keep them exciting. Here’s one of our old favourites that makes a hearty and warming meal.

This recipe is very easy to execute, once the tofu and zucchini are diced up into nice little cubes 🙂 It’s then just a matter of assembling and baking. Continue reading
